Lunchtime #5: Imogen’s Veggie Heaven

After a few days of chips, pizza’s and nighttime partying our bodies were screaming for vitamins so we chose for a healthy option today. Fruit and veggies anywhere? Difficult. As a vegeterian myself [Cueblog reporter Pauline] I  find it very difficult to find a decent veggie meal during fest.

Imogen Ashfield (19) a student from Edinbrough, a vegeterian all her life, is an answer to my prayers. She started a food stall in front of the Old Gaol Backpackers in Somset Street. Everyday she makes healthy and vegetarian meals in the shared kitchen, varying from butternut pastries to a date banana spice cake.

“I love to cook and people always enjoy my food so I thought why not start a booth? There is only cheap unhealthy food like chips you can buy at Fest so I wanted to give a budget and healthy veggie option. With my fresh and balanced meals I wanted to show you can be creative with veggies.”

The cooking princess is making vegetarians happy today with a choice of couscous with tomato and cashew or a wholeweat pita bread stuffed with a veggie stew. Having to eat fast food all week this was refreshing. The cashews and sundried tomatoes were a good combination with the couscous and the stew was deliciously moisty. I loved it but some of the meat loving guys at CueBlog still rather eat a steak.
